# Peanut butter brittle

## Ingredients

- 440 g caster sugar
- 250 ml glucose syrup
- 125 ml water
- 1 tsp bicarbonate of soda
- 300 g salted peanuts
- 50 g unsalted butter, chopped
- 2 tsp vanilla extract (optional)

## Instructions

1. Line a large baking tray with baking paper.
2. Place sugar, glucose syrup, and water in a saucepan over medium heat. Cook, stirring occasionally, until the sugar has dissolved. Attach a sugar thermometer to the edge of the saucepan and continue to cook, stirring occasionally, until the colour changes to golden brown and the temperature reaches 180°C.
3. Remove the pan from the heat and, working quickly, stir in the bicarbonate of soda, salted peanuts, unsalted butter, and vanilla extract. Carefully pour onto the lined tray and spread evenly with the back of a spoon. Cool and set.
