- 0.25 tsp vanilla extract
- 1 tsp maple syrup
- 0.25 tsp cinnamon
- 1 pinch baking powder
- 1 large piece whole grain bread

## Instructions

1. Pick an oversized coffee mug or a larger ramekin.
2. Add one egg, about one and a half tablespoons of milk, one tablespoon of peanut butter, a quarter teaspoon of vanilla extract, a teaspoon of maple syrup, a quarter teaspoon of cinnamon, and a pinch of baking powder to the mug.
3. Mix all ingredients really well with a fork until it's one consistency.
4. Cut one large piece of whole grain bread (or two smaller pieces) into small cubes.
5. Add the bread cubes to the coffee mug and mix until all bread cubes are coated in the liquid.
6. Microwave on high for one to two minutes, keeping an eye on it until it puffs up and comes over the edge of the mug.
7. Carefully remove the mug from the microwave.
8. Add desired toppings such as extra peanut butter, cinnamon, or mashed frozen strawberries.

## Equipment

- oversized coffee mug
- fork
- microwave

## Tips

- Use an oversized mug or a larger ramekin as the French toast will puff up.
- Use whole grain, higher fiber bread, which will also likely mean it's higher in protein.
- Keep an eye on it when microwaving; it's done when it starts to puff up and come over the edge of the mug.
- Be careful as the mug may be hot when pulling it out of the microwave.
- Add desired toppings like extra peanut butter, cinnamon, or mashed frozen strawberries.
