# Loaded Taco Potato Skins

Crispy fried potato skins topped with seasoned beef, chipotle salsa, and fresh taco toppings.

## Ingredients

- 6 whole potato
- as needed cooking oil
- 12 slice cheddar cheese
- 2 cup seasoned ground beef
- 1/2 cup chipotle salsa
- 2 whole tomato
- 2 whole avocado
- 1/2 cup onion
- 1/4 cup cilantro
- 1/4 cup sour cream
- 1 whole serrano chili
- 1/4 cup cotija cheese

## Instructions

1. Bake whole potatoes in an oven until cooked through.
2. Slice the cooked potatoes in half lengthwise.
3. Scoop out the centers of the potatoes.
4. Fry the potato skins in hot oil until crispy.
5. Place two half-slices of cheddar cheese on each fried potato skin and melt in an oven.
6. Top the cheesy skins with seasoned ground beef and chipotle salsa.
7. Add diced tomatoes, diced avocado, chopped onion, and cilantro.
8. Drizzle with sour cream and top with sliced serrano chili and crumbled cotija cheese.
