# Restorative Ginger and Turmeric Noodle Soup

Inspired by the principles of Chinese medicine, this restorative soup is comforting and aromatic.

## Ingredients

- 6 whole garlic clove
- 5 whole shallot
- 3 inch fresh ginger
- 3 whole serrano chile
- 2 tsp fresh lime juice
- 2 tsp ground cumin
- 2 tsp ground turmeric
- 1 tsp ground coriander
- 1/4 cup coconut oil
- 1/4 cup and 1 tbsp cup olive oil
- 4 cup vegetable stock
- 1 can coconut milk
- 10 oz uncooked udon noodles
- 1 bunch swiss chard
- 2 whole scallion
- 1 cup fresh cilantro leaves

## Instructions

1. Pulse shallots, ginger, garlic, and serrano chiles in a food processor until finely minced.
2. Add ground cumin, turmeric, and coriander to the processor and blend until a paste forms.
3. Thinly slice garlic cloves and fry them in olive oil until golden brown.
4. Add the prepared paste to a large pot with heated coconut oil, then pour in the vegetable stock and coconut milk.
5. Stir the soup and add the Swiss chard to wilt.
6. Ladle the hot soup over pre-cooked udon noodles in bowls.
7. Garnish with fresh cilantro, crispy garlic slices, and a squeeze of fresh lime juice.
