# One Pan Skillet Lasagna

A one-pan skillet lasagna that reminds you of Stouffer's family-size frozen lasagnas.

- Total time: 15 min
- Cuisine: Italian
- Category: Soup
- Language: en

## Ingredients

- 1 pound ground beef
- 2 minced garlic cloves
- 1 can Italian-style diced tomatoes
- 1.5 jars spaghetti sauce
- 1.5 cups low-fat cottage cheese
- 1 can cream of onion soup
- 2 whole eggs
- 1 teaspoon Italian seasoning
- oven-ready lasagna noodles
- 1 handful shredded mozzarella cheese
- parsley

## Instructions

1. Add a pound of ground beef and two minced garlic cloves to a hot oil pan.
2. Break up the ground beef and brown it.
3. Drain the meat like you normally would.
4. Add one can of Italian-style diced tomatoes and a jar and a half of your favorite spaghetti sauce (or two on clearance) to the meat.
5. Give it a good stir and bring it up to a simmer.
6. Turn the heat off and transfer the meat mixture to a large bowl and set it aside.
7. In a smaller bowl, add one and a half cups of low-fat cottage cheese, one can of cream of onion soup, two whole eggs, and a teaspoon of Italian seasoning.
8. Whisk all of this until it is beautifully combined.
9. Set the cottage cheese mixture aside and bring the meat mixture back.
10. Put enough meat mixture to spread across the bottom of the pan, about a cup's worth.
11. Add half of your cottage cheese mixture and spread that out.
12. Add another layer of meat mixture.
13. Add some oven-ready lasagna noodles, break them up, and just cover this however you want, there's no real rules.
14. Add another layer of meat sauce, the rest of your cottage cheese, another layer of meat sauce, and another layer of noodles.
15. Bring the rest of the meat sauce in and completely cover it, spread it out.
16. Turn the heat up and bring this to a simmer.
17. Put the lid on and just let it simmer for about 15 minutes so that those noodles cook.
18. Take the lid off and check the noodles.
19. If they're ready, put on a handful of shredded mozzarella cheese.
20. Put the lid back on and take this off the heat, you're just letting the cheese melt.
21. Once the cheese is melted, take the lid off.
22. If you have parsley in your pocket, throw it on there.
23. Get a spoon, cut a piece of this out, and put it on a plate.
24. Grab a fork, scoop up a big old bite of this and put the whole thing in your mouth.
