# Sloppy Beef Enchilada Skillet

## Ingredients

- 1 yellow onion diced
- 1 lb ground beef
- 1 tbsp mince garlic
- 1 tsp chili powder
- 1 tsp cumin
- 0.5 tsp onion powder
- 0.5 tsp garlic powder
- 0.5 tsp paprika
- 0.5 tsp pepper
- 0.25 tsp sea salt
- 0.25 tsp cayenne pepper
- 2 cups enchilada sauce
- 7 oz diced green chilis
- 10 oz tomatoes & green chilies, drained
- 1 can black beans, drained and rinsed
- 10 corn tortilas, cut into strips
- 2 C shredded colby cheese
- 0.25 C diced cilantro

## Instructions

1. sauté beef, garlic, & onions, cook through
2. stir in seasonings, tomatoes & chilis, & beans
3. mix in half the sauce, half the cheese, & cut tortillas
4. top w/ remaining sauce & cheese
5. cook over low till bubbly
6. top w/ diced cilantro
