## Ingredients

- olive oil
- 1 onion
- 3 cloves minced garlic
- 1 red bell pepper
- 1 pound ground turkey
- salt
- pepper
- cumin
- paprika
- oregano
- chili powder
- 1 pinch cayenne pepper
- 1 can (28-ounce) crushed tomatoes
- 1.5 cup vegetable broth
- 2 cans (15 oz) red kidney beans
- 1 can (15 oz) sweet corn
- avocado
- cilantro
- sour cream
- cheese

## Instructions

1. Chop one onion.
2. Chop one red bell pepper.
3. Add olive oil to a pot and heat.
4. Add chopped onion, chopped red bell pepper, and minced garlic to the pot.
5. Sauté the vegetables until they are soft.
6. Add ground turkey to the pot.
7. Season the meat and vegetables with salt, pepper, cumin, paprika, oregano, chili powder, and a pinch of cayenne pepper.
8. Mix well to combine the seasonings with the meat and vegetables.
9. Add two cans of drained and rinsed red kidney beans to the pot.
10. Add one can of drained and rinsed sweet corn to the pot.
11. Add one can of crushed tomatoes to the pot.
12. Pour in 1.5 cups of vegetable broth.
13. Mix all ingredients together.
14. Bring the chili to a boil.
15. Reduce the heat, cover the pot, and let it simmer for about 30 minutes.
16. Serve the chili in a bowl.
17. Top with sliced avocado.
18. Add cilantro as a topping.
19. Add sour cream.
20. Sprinkle with cheese.
