## Ingredients

- 0.75 cup warm water
- 2.25 tsp dry active yeast
- 0.75 cup warm whole milk
- 3 tbsp melted butter
- 3 cups all purpose flour
- 0.5 tsp salt
- 3 tbsp brown sugar
- 1 tbsp cinnamon
- 1 cup raisins
- olive oil
- corn meal

## Instructions

1. Combine 3/4 cup warm water, 2 1/4 tsp dry active yeast, and 1 tbsp of brown sugar in a large mixing bowl.
2. Let the mixture stand for about 5 minutes until it becomes foamy.
3. Add 3/4 cup warm milk, 3 tbsp melted butter, 3 cups all-purpose flour, 1/2 tsp salt, the remaining 2 tbsp brown sugar, 1 tbsp cinnamon, and 1 cup raisins to the bowl.
4. Stir until a shaggy dough forms.
5. Transfer the dough onto a floured surface and gently work it with your hands to form a dough ball, adding more flour if too sticky or 1 tbsp warm water if too crumbly.
6. Transfer the dough back to the lightly oiled large mixing bowl.
7. Cover the bowl with plastic wrap and let it sit in a warm area for about 1 hour, or until it doubles in size.
8. Sprinkle flour on the work surface and turn the risen dough out onto it.
9. Divide the dough into 8-9 equal pieces using a dough cutter.
10. Lightly flour the sections and your hands, then fold and pinch each piece into a secure ball.
11. Arrange the shaped dough pieces on a lined baking sheet.
12. Cover them with a kitchen towel or plastic wrap and let them rise for another 30 minutes.
13. Lightly grease a cast iron skillet and place it over medium heat.
14. Dip each side of the dough balls into a bowl of corn meal.
15. Pan-fry the English muffins in the skillet for 1-2 minutes on each side until a golden brown crust forms.
16. Transfer the griddled muffins to an oven and bake at 350°F for 10-15 minutes to ensure they are cooked all the way through.
