## Ingredients

- 1.5 cups all-purpose flour
- 1.5 cups old-fashioned rolled oats
- 1 tsp cinnamon
- 0.5 tsp baking soda
- 0.5 tsp baking powder
- 0.5 tsp salt
- 1 cup salted butter
- 0.75 cup brown sugar
- 0.5 cup granulated sugar
- 0.5 cup mashed ripe banana
- 1 egg
- 1.5 tsp vanilla extract
- 1.5 cups chocolate chips/chunks
- 0 flaky sea salt
- 1 scoop vanilla ice cream
- 2 tbsp salted butter
- 1 banana
- 2 tbsp brown sugar
- 1 tsp cinnamon
- 3 tbsp coconut oil
- 0.25 cup smooth almond butter
- 0.25 cup maple syrup
- 1 pinch salt

## Instructions

1. Brown the butter. Add the butter to a saucepan over medium-high heat. Allow to melt and slightly brown (~5-8 minutes).
2. Once just golden brown, add the mashed bananas and sprinkle about 1-2 tbsp of the brown sugar on top. Mix and allow to simmer for 2-3 minutes, until the bananas are slightly caramelized in the brown butter.
3. Remove from the heat and immediately pour into a large bowl. Set aside and allow to cool slightly.
4. In a medium bowl, whisk together the flour, oats, cinnamon, baking soda, baking powder, and salt. Set aside.
5. Once the brown butter/caramelized mashed banana mixture is slightly cooled, add both sugars and whisk until well combined.
6. Then whisk in the egg and vanilla until fully combined.
7. Add the dry ingredients to the wet. Use a wooden spoon or spatula to mix until just combined.
8. Then, fold in the chocolate chips/chunks and the caramelized banana slices (if using).
9. Transfer and press the batter into the prepared skillet, making sure it is in an even layer.
10. Bake at 350F for 28-32 minutes, or until golden brown and the middle is still slightly gooey.
11. Allow to cool for at least 10 minutes before serving.
12. Make the easy salted caramel (if using), by mixing together all of the ingredients in a medium bowl, until smooth.
13. Serve the cookie skillet warm with a scoop of vanilla ice cream, flaky sea salt, and a drizzle of salted caramel, if desired.
