# Aloo Gosht

A traditional Pakistani mutton curry made with tender mutton and soft potatoes, infused with rich, homemade desi flavors.

## Ingredients

- 1/2 cup cooking oil
- 1 tsp cumin seeds
- 2 whole onion, thinly sliced
- 900 g mutton
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 1/2 tsp red chili powder
- 1 tsp cumin powder
- 2 tsp coriander powder
- 1 1/2 tsp salt
- 1/2 tsp turmeric
- 2 whole tomato puree
- 1/2 cup yogurt
- 2 whole potato, cut into large chunks
- green chili (optional)
- fresh coriander (optional)
- garam masala powder (optional)

## Instructions

1. Heat oil in a pressure cooker and add cumin seeds, allowing them to crackle.
2. Add sliced onions and fry until golden brown.
3. Add the mutton and fry until the color changes.
4. Stir in garlic and ginger paste and continue to fry.
5. Add chili powder, cumin powder, 1 tsp coriander powder, salt, turmeric, and a splash of water, then fry well.
6. Add tomato puree and cook until the oil separates.
7. Stir in yogurt and cook until the liquid evaporates into a thick, granular masala.
8. Add potato chunks and sauté briefly.
9. Add hot water to achieve the desired gravy consistency.
10. Stir in green chilies and fresh coriander, then cover the pressure cooker.
11. Pressure cook for 10 minutes.
12. Open the cooker and finish by sprinkling with garam masala powder.
