# Malloreddus alla campidanese

A typical pasta dish from Campidano, Sardinia, made with sausage and lots of pecorino cheese.

## Ingredients

- 320 g maloreddus pasta (gnocchetti sardi)
- 700 g tomato sauce
- 300 g sausage
- 200 g pecorino sardo cheese
- 1 whole onion
- salt (optional)
- baking soda (optional)
- 2 tbsp extra virgin olive oil
- water (optional)

## Instructions

1. Finely chop the onion and gently stir fry with 2 tablespoons of extra virgin olive oil and a splash of water for 1 minute.
2. Add the sausage with its casing removed.
3. Cook while mashing the sausage with a fork or a potato masher.
4. Add the tomato passata and bring to a boil.
5. Lower the heat, cover, and let it cook.
6. Meanwhile, cook the gnocchetti sardi until al dente.
7. Finely grate the pecorino cheese and set aside 1 ladle of the pasta cooking water.
8. Add the water to the pecorino and whisk until it forms a smooth cream (use an immersion blender if it doesn't melt smoothly).
9. Stir in the pecorino cream and toss the pasta together.
