# Swamp Thing (A Mix of All Green Sauces)

## Ingredients

## Instructions

1. Combine parsley, red wine vinegar, olive oil, garlic, chili, and oregano to make a basic chimichurri from Argentina.
2. Replace the vinegar with lemon juice, and swap out the chili and oregano for capers and anchovy to make Italian salsa verde.
3. Change the parsley to cilantro, the lemon to lime, the olive oil to tomatillos, and the capers and anchovy for onion and jalape
	o to make a basic Mexican salsa verde.
4. Combine parsley, lemon zest, and garlic to make Italian gremolata.
5. Add cilantro, olive oil, cumin, and green chili to the gremolata base to make the spicy green Zhoug from Yemen.
6. Replace the green chili with paprika in the Zhoug base to make a Moroccan Chermoula.
7. Swap out the parsley for mint, add green chili, ginger, and cumin to make a basic green chutney from India.
8. Combine basil, olive oil, garlic, pine nuts, and parmesan for an Italian pesto.
9. Remove the parmesan and pine nuts from the pesto to make a French pistou.
10. Combine all the green sauces (salsa verde, pesto, green chutney, pistou, chermoula, Zhoug, gremolata) to create the "Swamp Thing."
