## Ingredients

- 1 package pinto beans
- 1 onion
- 1 jalapeno
- garlic
- 1 smoked ham hock
- chicken bouillon
- 1 pack bacon
- 0.5 can canned diced jalapenos
- 1 handful cilantro

## Instructions

1. Clean the pinto beans, picking out any that don't look right.
2. Place the cleaned beans in a pot with an onion, a jalapeno, some garlic, a smoked ham hock, and some chicken bouillon.
3. Bring the mixture to a boil, then cover, turn down to low, and check after an hour and a half.
4. Slice up a whole pack of bacon and cook it covered until it's crispy.
5. Once the bacon is cooked, remove it from the pan.
6. Drain off most of the bacon fat from the pan.
7. Add the vegetables (onion and jalapeno from the bacon pan) to the pan and cook covered for 10 minutes.
8. After 10 minutes, add some garlic to the vegetables.
9. After a couple of minutes, add tomatoes to the pan.
10. Cook covered for about 10 minutes.
11. After 10 minutes, remove the cover and cook down the mixture until it becomes a jam-like consistency.
12. Once the beans are done, remove the big pieces and the ham hock.
13. Pull the meat off the ham hock and cut it into chunks; also pull the skin off and cut it into small pieces.
14. Return the ham hock meat and skin, and the bacon to the pot with the beans.
15. Add the tomato-onion mixture to the pot and mix well.
16. Add some juice from canned diced jalapenos, then about half the can of diced jalapenos (or however much you like).
17. Add a big handful of cilantro to the pot.
18. Cook covered for another half an hour.
19. Plate up the Frijoles Charros and finish with a couple of cilantro leaves.
