## Ingredients

- 3 lbs Russet potatoes, chopped
- 1.5 lbs Boneless skinless chicken breast, chopped
- 1 cup Fat Free Fairlife Milk
- 1 cup Chicken Broth
- 0.25 cup Shredded Parmesan
- 0.25 cup Grater Parmesan
- 2 Tbsp Corn Starch
- 2 Tbsp Cooking Oil
- 1 Tbsp Butter
- 1 Tbsp Garlic Powder
- 1 Tbsp Onion Powder
- 0.5 Tbsp Italian Seasoning
- Salt
- Pepper

## Instructions

1. Start by cutting your potatoes into quarters.
2. Place them in a microwave-safe bowl.
3. Cover with a damp paper towel.
4. Microwave for 3 to 4 minutes.
5. Once those are done, lay them out on your cutting board.
6. You'll know they're done if the knife has just a little bit of resistance when you cut through it.
7. Let these cool while you cook your chicken.
8. Season your chicken with half a tablespoon of garlic powder.
9. Half a tablespoon of onion powder.
10. And mix to coat.
11. Heat one tablespoon of cooking oil over medium-high heat.
12. Once your oil is hot, add in your chicken.
13. And let that cook until no longer pink in the middle.
14. While your chicken is cooking, go ahead and chop up your potatoes into bite-sized pieces.
15. Once those are all chopped up, season with a little bit of salt and set them aside.
16. Once your chicken is cooked through and has some nice color on the outside, remove it from the skillet.
17. Return that same skillet back to the stove over medium heat.
18. Melt in your butter.
19. And add in your remaining cooking oil.
20. Once your butter is melted, add in your chopped potatoes.
21. Once you're happy with the cook on your potatoes, add in half tablespoon garlic powder.
22. Half tablespoon onion powder.
23. And half tablespoon Italian seasoning.
24. Give that a mix.
25. Reduce the heat to a simmer and add in your chicken broth.
26. Let that simmer for 2 to 3 minutes.
27. Make your slurry by adding your milk and corn starch together.
28. And then add in your milk slurry.
29. Give that a little mix and let it continue to simmer until your sauce thickens.
30. Once your sauce looks something like this, add in your grated Parmesan cheese.
31. Mix that in.
32. And then add in your cooked chicken.
33. Once everything is done, give it a taste and add salt and pepper to preference.
34. Portion out your meal containers.
35. Top with your shredded Parmesan cheese.
