# Valentine's Day Sandwich Cookies

## Ingredients

- 1 stick butter
- 1.75 cups powdered sugar
- 1 tsp vanilla extract

- 1 tbsp red food coloring
- 1 tbsp pink food coloring
- 0.5 stick butter
- 3 cups powdered sugar
- 11.4 oz strawberry meringue powder mix
- 1 tbsp milk

## Instructions

1. Cream together butter and powdered sugar.
2. Add vanilla extract and eggs.
3. Add flour and mix until a dough forms.
4. Divide dough into three parts. Add red food coloring to one, pink to another and leave the third plain.
5. Roll the dough and cut out heart shapes.
6. Bake the cookies.
7. Cream together butter and powdered sugar for the filling.
8. Add meringue powder and milk to make the filling.
9. Mix until combined.
10. Assemble the sandwich cookies by spreading the filling and topping with another cookie.
