## Ingredients

- 1.5 lb center cut salmon filets, skin removed and cut into approx. 1 inch pieces
- 2 Tbsp olive oil
- Juice of half a lemon
- 1 Tbsp honey
- 2 Tbsp soy sauce, tamari for gluten free
- 3 garlic cloves, minced
- 0.25 tsp onion powder
- 0.75 tsp smoked paprika
- 0.5 tsp pepper
- 0.5 tsp sea salt
- 0.5 c mayonnaise
- 3 Tbsp sweet chili sauce
- 0.5 Tbsp sriracha, vary to desired spice level
- 2 tsp honey
- 1 tsp rice vinegar

## Instructions

1. Cut salmon into approximately 1 inch cubes/pieces, making them as uniform in size as possible, and add them to a medium bowl.
2. Combine all of the salmon marinade ingredients in a small bowl and whisk well.
3. Toss the marinade with the salmon to fully coat, and marinate for up to 30 minutes, but no longer, as the acid in the lemon will cause the salmon to become mushy.
4. Add the salmon bites to the air fryer basket in a single layer, working in batches if needed.
5. Set the air fryer to 400°F and air fry for about 7-10 minutes, turning or shaking halfway through is optional.
6. While the salmon cooks, whisk the bang bang sauce ingredients together and adjust spiciness to taste.
7. When the salmon is cooked, allow it to rest for 3-5 minutes before serving with a generous drizzle of bang bang sauce.

## Equipment

- air fryer

## Tips

- Cut the salmon in uniform sized pieces for even cooking.
- Do not preheat the air fryer to make it easier to add the salmon and prevent overcooking.
- Do not marinate the salmon longer than 30 minutes, as the acid in the lemon juice can make it mushy.
- Stay close to the air fryer to ensure you do not overcook the salmon, as cooking times can vary between models.
- Store leftover salmon bites in an airtight container in the refrigerator for 3-4 days.
- The bang bang sauce will keep for about a week in the fridge.
- Salmon bites can be frozen for up to 3 months by wrapping in foil and placing in a freezer-safe bag after cooling.
