# Traditional Scottish Tablet

A traditional Scottish sweet similar to fudge but with a non-chewy, crumbly, and extremely sweet texture.

## Ingredients

- 900 g caster sugar
- 370 g condensed milk
- 1 tsp vanilla essence
- 150 ml whole milk
- 125 g unsalted butter

## Instructions

1. Melt butter in a large deep pot, then add milk, condensed milk, and caster sugar. Stir frequently over low heat for 30 to 35 minutes until the mixture darkens and resembles the surface of the moon.
2. Add vanilla essence and continue to stir until thickened.
3. Transfer the mixture to a stand mixer with a balloon whisk attachment or use a hand whisk and beat for 5 minutes until it thickens further and pulls away from the sides of the bowl.
4. Spread the mixture into a flat tray, preferably with a loose bottom, and press down with the back of a spoon to smooth and compact.
5. Leave to set for at least 1 hour, then cut into squares.

## Tips

- Do not walk away while cooking; keep stirring to prevent burning due to the high sugar content.

- Use a loose-bottom tray to make it easy to remove and cut the tablet once set.
