## Ingredients

- 7 Pineapple Chunks
- 40 ml Lemon Juice
- 1.3 oz Lemon Juice
- 30 ml Rich Simple Syrup
- 1 oz Rich Simple Syrup
- 60 ml Aperol
- 2 oz Aperol
- 60 ml Gin
- 2 oz Gin
- Ice
- Mint

## Instructions

1. Add pineapple chunks to the glass
2. Pour lemon juice to the glass.
3. Add simple syrup to the glass.
4. Muddle.
5. Add Aperol to the glass.
6. Pour Gin to the glass.
7. Add ice to the glass
8. Shake.
9. Add ice to a new glass
10. Strain into glass.
11. Garnish with mint and pineapple.
