# Easy Lemon Cookies

## Ingredients

- 4 whole egg
- 1 cup sugar
- 2/3 cup sunflower oil
- 2 whole lemon zest
- 1/2 cup lemon juice
- 5 1/2 cup all-purpose flour
- 2 tbsp baking powder
- powdered sugar (optional)

## Instructions

1. Preheat the oven to 350°F (175°C).
2. In a bowl, mix eggs, sugar, oil, lemon zest, and lemon juice.
3. In a separate bowl, combine flour and baking powder, then add to the wet ingredients.
4. Mix until you get a soft, sticky dough.
5. Roll into golf ball-sized pieces, then toss in powdered sugar.
6. Place on a parchment-lined baking sheet.
7. Bake for 18–20 minutes, until lightly golden and set.
8. Dust them with a little extra powdered Sugar before serving!
