# Blueberry Lemon Cheesecake Cookies

## Ingredients

- 1 cup Blueberries
- 0.25 cup Sugar
- 0.5 tablespoon Lemon juice
- 8 ounces Cream cheese
- 0.25 cup Sugar
- 0.5 teaspoon Vanilla extract
- 2.5 cups Granulated sugar
- 2 teaspoons Lemon zest
- 1 cup Unsalted butter
- 1 Egg
- 1 teaspoon Vanilla extract
- 2.5 cups All-purpose flour

## Instructions

1. Add blueberries to a pot.
2. Add sugar to the blueberries.
3. Add lemon juice to the blueberries.
4. Cook the blueberry mixture over heat until it thickens into a jam.
5. Transfer the blueberry jam to a bowl and let it cool.
6. Add cream cheese to a mixing bowl.
7. Add sugar to the cream cheese.
8. Add vanilla extract to the cream cheese mixture.
9. Mix the cream cheese filling with a hand mixer until smooth and creamy.
10. Scoop small portions of the cream cheese filling onto a parchment-lined tray.
11. Smooth out the scooped cream cheese portions.
12. Add granulated sugar to a large mixing bowl.
13. Add lemon zest to the sugar and rub them together.
14. Add softened unsalted butter to the sugar and lemon zest mixture.
15. Cream together the butter, sugar, and lemon zest using a hand mixer.
16. Add one egg to the mixture.
17. Add vanilla extract to the mixture.
18. Add all-purpose flour to the mixture.
19. Mix the ingredients to form a cookie dough.
20. Add the cooled blueberry jam to the cookie dough.
21. Fold the blueberry jam into the cookie dough until just combined, creating a marbled effect.
