## Ingredients

- 360 g apple cider
- 240 g all-purpose flour
- 2 g baking soda
- 6 g baking powder
- 3 g salt
- 4 g cinnamon
- 0.5 g nutmeg
- 100 g light brown sugar
- 55 g granulated sugar
- 2 g lemon zest
- 113 g melted butter, cooled
- 100 g eggs
- 60 g greek yogurt
- 120 g unsweetened applesauce
- 8 g vanilla extract

## Instructions

1. Reduce the apple cider in a pot over medium heat until it reaches 120g.
2. In a bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In a separate bowl, whisk together the cooled apple cider reduction, light brown sugar, granulated sugar, lemon zest, and melted butter.
4. Whisk in the eggs, Greek yogurt, applesauce, and vanilla extract.
5. Fold the dry ingredients into the wet mixture until combined.
6. Pour the batter into a lined 9x5 loaf pan and bake at 350F for 45 minutes.
7. Brush the cooled loaf with the remaining apple cider reduction and coat in cinnamon sugar.
