- 6 cups chicken broth
- 6 cups Russet potatoes, peeled and diced
- 2 cups frozen vegetable mix

- 1 1/2 cups milk
- 2 tablespoons cornstarch

5. Stir in diced Russet potatoes, chicken broth, frozen vegetables, dried basil, and dried parsley flakes.
6. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender; alternatively, simmer on the stovetop for 30-40 minutes.

8. Stir in Velveeta cheese cubes and cook until fully melted and the soup is smooth.
9. Ladle into bowls and garnish with parsley if desired.

## Equipment

- frying pan
- crockpot
- stockpot
- small bowl

## Tips

- Cut potatoes into roughly the same size to ensure even cooking.
- Use lean or extra lean beef to avoid greasy soup.
- Substitute ground turkey or chicken for a lighter version.
- Substitute shredded cheddar or a cheese blend for Velveeta.
- Add thyme or oregano for additional complexity.
- Use fresh diced vegetables as an alternative to frozen.
- Serve with crusty French bread, buttery biscuits, garlic toast, or a crisp side salad.
- If the soup is too thick, add more milk or broth to adjust consistency.
