## Ingredients

- olive oil
- shallots
- garlic
- rosemary
- olives
- whipped ricotta
- pistachios

## Instructions

1. Pour olive oil into a pot.
2. Add sliced shallots to the olive oil.
3. Fry the shallots until crispy and then remove them using a strainer.
4. Add sliced garlic to the olive oil.
5. Fry the garlic until crispy and remove it, placing it with the shallots on a paper towel.
6. Add fresh rosemary to the remaining olive oil.
7. Return the fried shallots and garlic to the oil with the rosemary.
8. Add olives to the pot and mix well to marinate.
9. Whip ricotta in a food processor until smooth.
10. Spread the whipped ricotta onto a serving plate.
11. Spoon the marinated olives over the whipped ricotta.
12. Garnish with crushed pistachios.
13. Serve with bread.
