## Ingredients

- 0.75 cup warm milk
- 1 tbsp dry active yeast
- 1 tbsp granulated sugar or maple syrup or honey
- 4 tbsp melted butter
- 1 tsp vanilla extract
- 0.33 cup maple syrup
- 3.5 cups all purpose flour
- 1.5 tsp salt
- 0.5 tsp baking powder
- 2 tsp cinnamon
- 0.33 cup brown sugar
- 5 strips crispy, cooked bacon
- butter
- powdered sugar

## Instructions

1. In a large mixing bowl, combine warm milk, dry active yeast, and granulated sugar (or honey). Stir until combined and let stand 5-10 minutes until foamy.
2. Add melted butter, vanilla, and maple syrup to the large bowl containing proofed yeast.
3. In a separate large bowl, combine dry ingredients of all-purpose flour, salt, baking powder, cinnamon, and brown sugar. Stir to combine before adding it to your large mixing bowl containing wet ingredients.
4. Stir to bring a shaggy dough together.
5. Add finely chopped crispy bacon to the dough.
6. Continue to bind the bacon bits into the dough gently with your hands, until a dough ball forms.
7. Transfer dough ball back into the large mixing bowl that has been lightly drizzled with oil or melted butter.
8. Cover with a kitchen towel and place in a warm, dry place to rise for 1 hour, or until doubled in size.
9. Divide dough into 6-8 equal pieces.
10. Roll the dough pieces into balls.
11. Arrange dough pieces on a lined baking sheet and cover with a kitchen towel to let rise another 30 minutes while your oven preheats.
12. While waiting for the dough to rise, make the maple icing by adding a little butter to a pan, then real maple syrup, and then powdered sugar.
13. Place a lightly greased cast iron skillet over medium-high heat.
14. Pan-fry each side of the dough ball for 1-2 minutes until a golden brown crust forms. Reduce heat to medium-low if they are cooking too quickly.
15. Bake at 350°F for 10-15 minutes to ensure they are cooked all the way through.
16. Dip the griddled English muffins into the maple icing.
17. Top with a piece of crispy bacon.

## Equipment

- mixing bowl
- whisk
- knife
- kitchen towel
- lined baking sheet
- cast iron skillet

## Tips

- Don't overwork/knead the dough; we want lots of air bubbles to form.
- If bacon isn't your thing, you can leave it out.
- If you make really big, fluffy English muffins, finish them off in the oven.
- Traditionally, cornmeal is used to griddle English muffins, but it was left out since these will be iced.
- Maple bacon donut English muffins make the "meanest" bacon, egg, and cheese sandwich.
- You can divide the dough into 6-8 equal pieces to make English muffins of different sizes.
