- 1 cup finely chopped onions
- 1.5 tsp Chili powder
- 0 salt
- 2 tbsp sugar
- 0 butter
- 1 tbsp kasuri methi
- 0 Heavy cream
- 0 coriander

## Instructions

1. Start off by chopping 6 Roma tomatoes, slicing 1.5 cups of onions, peeling 3 garlic cloves, and finely chopping 1 inch of ginger.
2. Prepare your yogurt masala mix by adding 3 tbsp of yogurt, 1 tsp of Kashmiri Chili powder, 1 tsp of Coriander powder, and 1 tsp of turmeric.
3. Mix it up, add butter, and set it aside.
4. In a pan set to medium-high heat, add 3 tbsp of Ghee, 2 bay leaves, 3 cloves and 2 cardamom pods.
5. After 30 seconds, add ginger, garlic, and 2 Thai Green chilies. Cook for a minute before adding the onions.
6. Keep stirring and cook till the onions turn translucent.
7. Add the yogurt mix and let it cook for a few minutes before adding 2 dried red chilies, 18 cashews.
8. Incorporate it and add tomatoes, salt to taste, and chili powder.
9. Stir to combine and add just enough water to cover the tomatoes.
10. Cover and let it cook till the tomatoes turn mushy.
11. While that's happening, cut your paneer into cubes and soak in warm salted water to soften them up.
12. Remove the whole spices and blend till smooth.
13. I like to do a final Tadka which is optional, but I think it takes it to the next level.
14. In a pan set to medium heat, add 4 tbsp of butter. Once it melts, add finely chopped onions and chili powder.
15. Cook this till translucent and then add the blended gravy into this.
16. Mix it up, taste it, and adjust salt amount and sugar to balance the flavors.
17. Add more butter and crushed kasuri methi.
18. Add the paneer and it's ready to serve with a final garnish of heavy cream and coriander.
