# Beef and Rice

## Ingredients

- 1 lb ground beef
- salt (optional)
- pepper (optional)
- garlic powder (optional)
- 1 onion, diced
- 1 green bell pepper, diced
- 1 can whole kernel corn
- 1 can black beans
- 1 can petite diced tomatoes
- 1 package taco seasoning mix
- 2 cup beef stock
- 1 cup long grain white rice

## Instructions

1. Brown the ground beef in a pan, seasoning with salt, pepper, and garlic powder to taste.
2. Add the diced onion and bell pepper to the pan and cook for 3 to 5 minutes, until the vegetables begin to soften.
3. Stir in the drained corn, rinsed black beans, petite diced tomatoes, taco seasoning mix, beef stock, and white rice.
4. Bring to a boil, then reduce heat to a simmer, cover, and cook for 20 to 30 minutes until the rice is done.
5. Remove from heat and let the dish sit covered for 5 minutes before serving.

## Tips

- You can use pre-cut frozen onion and green bell pepper.
- Use ground pork or sausage if you don't have ground beef.
