# Sweet Potato Honey Bun Cake

## Ingredients

- 1 box yellow cake mix
- 1 cup sour cream
- 4 eggs
- 0.75 cups vegetable oil
- 2 teaspoons vanilla extract
- 1 cup mashed sweet potato
- 3 drops orange food coloring
- 1 cup brown sugar
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 cup finely grated pecans
- 1 glaze

## Instructions

1. In a bowl, add yellow cake mix, sour cream, 4 eggs, 3/4 cup vegetable oil, and 2 teaspoons of vanilla extract. Mix well.
2. Add 1 cup of mashed sweet potato and 3-4 drops of orange food coloring. Mix again.
3. In a separate bowl, combine 1 cup of brown sugar, 2 teaspoons of cinnamon, 1 teaspoon of nutmeg, and finely grated pecans.
4. In a 9x13 inch baking pan, add half of the batter, followed by the cinnamon mixture, then the remaining batter. Swirl to combine.
5. Bake at 350°F for 45 minutes.
6. Once out of the oven, add the glaze.
