- sofrito criollo
- plantains
- olives
- lbs ground beef
- criollo adobo
- 0.75 cup tomato sauce
- chopped cilantro
- marinara sauce
- 2 eggs
- 8 oz cream cheese

## Instructions

1. Add oil to a caldero, then add chopped onion, chopped green pepper, and sofrito criollo.
2. Slice plantains, remove the peel, and cut them lengthwise in half, and pan fry them in oil.
3. Add olives and ground beef to the caldero, then season with criollo adobo and stir with a potato masher until the ground beef is separated.
4. Add the tomato sauce and chopped cilantro and cook for 5 minutes more.
5. Add marinara sauce to the bottom of a glass baking dish.
6. Layer the plantains over the sauce, then dollop cream cheese evenly on top and add some beaten egg.
7. Add a layer of ground beef, then repeat the layers of plantains, egg, cream cheese and ground beef.
8. Top it with mozzarella cheese, and bake at 400 degrees for 10 minutes.

## Tips

- The more ripe the plantains, the sweeter they will be.
- Using a potato masher is a good technique to keep the ground beef separated while cooking.
- Marinara sauce helps the pastelón unmold easier.
