# Chopped Apple Salad

## Ingredients

- 2 whole honeycrisp apple, cored and roughly chopped
- 5-6 whole celery stalk, roughly chopped
- 4 oz extra-sharp white cheddar cheese
- 1/2 cup pecans, toasted
- 1/3 cup pitted dates, roughly chopped
- 1 whole shallot, roughly chopped
- 1/4 cup extra-virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp pure maple syrup
- 1 tsp dijon mustard
- 1/2 tsp kosher salt
- to taste black pepper
- kettle-style potato chip (optional)

## Instructions

1. Roughly chop the honeycrisp apples, celery stalks, extra-sharp white cheddar cheese, pitted dates, and the shallot.
2. Combine the chopped ingredients in a bowl along with the toasted pecans.
3. Whisk together the extra-virgin olive oil, apple cider vinegar, pure maple syrup, Dijon mustard, kosher salt, and black pepper to create the dressing.
4. Pour the dressing over the salad and toss well.
5. Serve the salad with kettle-style potato chips.
