## Ingredients

- 4 leeks
- 3 onions
- 1 kg beef bones
- 1 kg ham bones
- 3 l milk
- 3 l cream
- 1 pinch nutmeg
- 1 pinch pepper
- 1.4 kg butter
- 1 kg flour
- 1.5 kg cecina
- 500 gr San Simón cheese
- 1 plate fried spinach
- 1 plate panko
- 1 plate liquid egg

## Instructions

1. Put four leeks and three onions into the thermomix.
2. Toast the beef bones and ham bones for the infusion.
3. Pour in 3 liters of milk and 3 liters of cream.
4. Add nutmeg and pepper.
5. Add 1.4 kg of butter to a pan and stir well.
6. Add 1 kg of flour to make the béchamel and mix well.
7. Sauté the onion and leek that we had previously blended in the thermomix until well browned.
8. Strain the infusion through a fine sieve.
9. Add the béchamel to the strained infusion.
10. Add 1.5 kg of cecina, spreading it out in portions so it doesn't all stay in one spot.
11. Add 500 gr of San Simón cheese.
12. Once we've worked it enough, put the mixture on a tray and let it cool.
13. Shape the croquette balls, dip them in liquid egg, and then cover them with some panko.
14. Press the panko well so they're nicely breaded, and then put them into the fryer until they turn a deep golden brown.
15. Place them on a base of fried spinach.
