# Poached Salmon in Egg Sauce

Tender salmon poached in cheesecloth and served with a rich, egg-based sauce that is similar to a lighter hollandaise.

## Ingredients

- 2 piece salmon fillet
- 2 hard-boiled egg
- 1 stick butter
- 1/2 cup water
- parsley, chopped (optional)

## Instructions

1. Wrap each salmon fillet in cheesecloth and tie the ends.
2. Submerge the salmon bundles into a pot of boiling water.
3. Remove the salmon from the boiling water once cooked.
4. Unwrap the salmon and remove the cheesecloth.
5. Melt butter in a bowl and whisk in water, then add chopped hard-boiled eggs.
6. Pour the egg sauce over the cooked salmon and garnish with parsley.
