## Equipment

- pan
- blender
- ramekins
- baking dish

## Tips

- Use organic oranges if possible, since you’re using the peel. Thin-skinned oranges work best for this recipe.
- Ensure some liquid remains after cooking the oranges, or add a little more water if needed (the pectin will help thicken as it cools).
- Dust with cacao powder before serving.
- Oranges (with the peel!) bring prebiotic fibres like pectin, which help feed your beneficial gut bacteria. The peel is also rich in polyphenols (plant compounds that support microbial diversity).
- Dark chocolate and cacao powder are rich in polyphenols, especially flavonoids, which have been linked to reduced anxiety, better mood, and improved brain function. They’re also a good source of magnesium.
