# Apple Pie Monkey Bread

## Ingredients

- 1 cup milk, warm
- 2 1/4 tsp instant yeast
- 2 tbsp granulated sugar
- 2 tsp salt
- 1 large egg
- 1 large egg yolk
- 4 tbsp butter, melted
- 3 1/2 cup all-purpose flour
- 1 cup granulated sugar
- 2 tbsp cinnamon
- 1 pinch salt
- 6 tbsp butter, melted
- 3 cup apple, peeled and diced into 1/4-inch pieces
- 10 tbsp salted butter
- 3/4 cup light brown sugar, packed
- 1/3 cup heavy cream
- 1 1/2 tsp cinnamon
- 1 tbsp lemon juice
- 1/2 tsp kosher salt
- 2 tsp cornstarch
- 1 tbsp water
- 2 tsp vanilla extract
- 1/2 cup powdered sugar
- 2 tbsp heavy cream
- 1/2 tsp vanilla extract
- 1 pinch salt

## Instructions

1. Combine flour, sugar, yeast, and salt in a stand mixer. Add warm milk, egg, egg yolk, and melted butter. Mix and knead with the dough hook for 8–10 minutes until smooth and stretchy, keeping the dough soft and avoiding extra flour.
2. Cover the dough and let it rise until doubled.
3. For the apple goo, melt butter in a skillet, add apples, and cook for 3-4 minutes. Stir in brown sugar, cream, cinnamon, lemon juice, and salt, then simmer for 2-3 minutes. Mix cornstarch and water, add to the skillet, and cook for 1 minute until thickened and glossy. Stir in vanilla and let cool.
4. Mix sugar, cinnamon, and salt in a bowl. Grease a Bundt pan well.
5. Cut the risen dough into 45–55 pieces. Dip each piece in melted butter, then roll in the cinnamon-sugar mixture.
6. Assemble by layering 1/3 of the apple goo, 1/2 of the dough pieces, 1/3 of the apple goo, the remaining dough, and finally the remaining apple goo.
7. Cover and let rise.
8. Bake at 350°F until golden and bubbling, checking that the center reaches 190–195°F. Tent with foil if browning too quickly.
9. Cool in the pan before inverting.
10. Whisk glaze ingredients together and drizzle over the warm monkey bread.
