# Homemade Italian Salad Dressing

This is the only recipe you're going to need for an Italian salad dressing, mixing olive oil with a neutral oil to avoid bitterness.

- Cuisine: Italian
- Category: Salad
- Language: en

## Ingredients

- 0.5 cup Greek extra virgin olive oil
- 0.75 cup avocado oil
- 1 tsp Dijon mustard
- 2 garlic cloves
- 0.5 tsp sea salt
- 0.25 tsp black pepper
- 2 tsp oregano
- 1 tsp sugar
- 0.25 cup red wine vinegar

## Instructions

1. Mix olive oil with a neutral oil, such as avocado oil, to prevent the dressing from becoming bitter in larger batches.
2. Combine half a cup of Greek extra virgin olive oil with three-quarters of a cup of avocado oil.
3. Dip your measuring spoon in oil before adding a teaspoon of Dijon mustard to ensure it falls out easily.
4. Add two garlic cloves to the mixture.
5. Add half a teaspoon of sea salt, a quarter teaspoon of black pepper, and two teaspoons of oregano.
6. Optionally, add one teaspoon of sugar or honey if you are anti-sugar.
7. Shake the dressing vigorously.
8. Add a quarter cup of red wine vinegar to the dressing.
9. Taste and adjust as needed.
10. Store the dressing in the fridge and shake before every use.
