# Spicy Potato Soft Tacos

## Ingredients

- 3 whole Idaho potato, peeled and cubed
- 2 tbsp vegetable oil
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp coriander
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1/2 tsp cayenne powder
- 1/2 cup mayonnaise
- 2 tbsp chipotle chili paste
- 2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp sugar
- flour tortilla
- to taste lettuce, shredded
- to taste shredded cheese
- to taste hot sauce
- to taste cilantro (optional)

## Instructions

1. Peel and cube the potatoes. Toss with vegetable oil and the specified spices, then arrange on a parchment-lined baking sheet.
2. Bake in the oven for 40 minutes at 450 degrees Fahrenheit, tossing halfway through.
3. While potatoes bake, mix the mayonnaise, chipotle chili paste, chili powder, garlic powder, paprika, and sugar in a small bowl until smooth.
4. Warm the tortillas in a pan over medium heat.
5. Assemble the tacos by topping the warm tortillas with the baked potatoes, shredded lettuce, shredded cheese, prepared chipotle sauce, hot sauce, and optional cilantro.

## Tips

- You can keep the skin on the potatoes if you prefer.
