- 2 cups warm water

## Instructions

1. Boil eggs in hot water for 8 minutes to make jammy eggs.
2. Immediately transfer the boiled eggs into icy cold water to stop the cooking process.

6. Blend the cooled fried onions with yogurt until it forms a smooth paste.
7. In the same leftover oil from frying the onions, add whole spices: bay leaves, cloves, green cardamoms (lightly crushed), mace blade, cinnamon, and black pepper. Let them sizzle and release their aroma.
8. Add ginger-garlic paste to the pot and stir until lightly golden.
9. Stir in the blended onion and yogurt paste along with Kashmiri red chili powder and salt.
10. Cook the curry base until the color deepens to a rich reddish-brown and the oil begins to separate.
11. Add 2 cups of warm water to the curry and bring it to a gentle boil.
12. Add the jammy eggs (reserve some for garnish) to the curry and simmer briefly to allow the flavors to soak in.
