## Ingredients

- 3 cups all-purpose flour
- 0.75 cup sugar
- 1.5 tsp salt
- 1 tbsp baking powder
- 1.5 tsp baking soda
- 2.5 cups milk
- 0.25 cup vegetable oil
- 1 tbsp vanilla extract
- 0.25 cup apple cider vinegar
- 3 eggs
- 0.25 cup whipped salted butter
- 1 bottle maple syrup

## Instructions

1. In a bowl, mix together the dry ingredients: all-purpose flour, sugar, salt, baking powder, and baking soda.
2. Whisk the dry ingredients to ensure there are no pockets of any one ingredient.
3. In a separate container, mix the wet ingredients: milk, vegetable oil, vanilla extract, apple cider vinegar, and eggs.
4. Whisk the wet ingredients until well combined.
5. Pour the wet ingredients into the bowl with the dry ingredients.
6. Fold the wet and dry ingredients together until just combined. DO NOT OVERMIX. Lumps are okay.
7. Place a dollop of whipped salted butter on the preheated griddle and spread it around.
8. Use a berry spoon (or any utensil that produces the desired pancake size) to scoop the pancake batter onto the griddle.
9. Do not stir the batter while scooping. Pick from the side, leaving the bubbles intact.
10. Cook pancakes until bubbles begin to pop on the surface.
11. Use a plastic spatula to flip pancakes away from you. DO NOT press down while flipping.
12. Once flipped, let the pancakes cook until they spring back when gently pushed.
13. Serve pancakes with whipped salted butter and maple syrup.
