## Equipment

- stove
- microwave
- whisk
- spatula
- 8 by 8 pan
- Parchment paper

## Tips

- Heating the sugar helps dissolve the sugar crystals into the fat, which contributes to a shiny, crackly top.
- Whisk vigorously for about a minute until the batter turns glossy and shiny to create a paper-thin meringue on top.
- Using Dutch process cocoa provides a smoother, more intense chocolate taste without bitterness.
