# Potato Kielbasa

A comforting one-pot dish of smoky sausage, potatoes, and peppers simmered in a light chicken stock glaze.

## Ingredients

- 1 whole cured smoked sausage
- potato, diced
- capsicum, sliced into strips
- onion, diced
- garlic, peeled and crushed
- fresh thyme (optional)
- 0.5 litre chicken stock
- salt (optional)
- pepper (optional)
- curly parsley, chopped (optional)

## Instructions

1. Heat oil in a pan over medium heat and sauté sliced sausage until browned on all sides.
2. Dice potatoes, slice capsicum, dice onion, and peel/crush garlic.
3. Remove sausage from the pan and set aside.
4. Add onions and capsicum to the pan and cook until slightly caramelized.
5. Add garlic, potatoes, and chicken stock. Bring to a simmer, cover, and cook for 25 minutes.
6. After 20 minutes, remove the lid, return the sausage to the pan, and continue to cook until the stock reduces to a sticky glaze.
7. Garnish with fresh parsley before serving.

## Tips

- Use any cured, smoked sausage if authentic Polish kielbasa is unavailable.
- Substitute fresh thyme with rosemary or dried herbs.
- Check the potatoes every five minutes during the simmer.
