# Marinara

A rich, rustic, and long-simmered homemade marinara sauce featuring a base of rendered pork fat, aromatic mirepoix, red wine, and fresh basil.

## Ingredients

- 1 thing guanciale or pancetta
- 2 whole shallots
- 1 whole carrot
- 6-8 whole garlic
- 1 whole tomato paste
- red wine (optional)
- 1 whole canned tomatoes
- 1 can water
- 1 bunch fresh basil
- maldon salt

## Instructions

1. Heat dutch oven to medium-low, then add diced guanciale or pancetta to extract fat.
2. Add minced shallots, grated carrot, and thinly sliced garlic to the rendered fat.
3. Add a whole can of tomato paste and mix well.
4. Add red wine to the mixture.
5. Add a whole can of tomatoes.
6. Add one can of filtered water.
7. Squish tomatoes by hand.
8. Cover loosely and simmer.
9. Add tied bunch of fresh basil and cover.
10. Remove basil bunch and stir in salt to taste.
