# blueberry streusel muffins

## Ingredients

- 1 stick unsalted irish butter
- 1 cup sugar
- 1 tsp vanilla extract
- 1 egg
- 1/2 cup cream
- 2 cups flour
- 1 pint organic blueberries

## Instructions

1. Place butter and sugar into a bowl and mix with an electric mixer.
2. Add vanilla extract to the mixture.
3. Crack exactly one egg into the bowl and continue mixing.
4. Add the cream and mix.
5. Add flour and mix to combine.
6. In a separate bowl, coat the blueberries with a small amount of flour, then fold them into the batter.
7. Scoop the batter into a muffin pan and top with streusel.
8. Bake in the oven.
