# Spicy Cajun Potato Soup

## Ingredients

- 4 whole potato, peeled and diced
- 1 small onion, chopped
- 3 clove garlic, minced
- 4 slice bacon, cooked and crumbled
- 2 tbsp butter
- 3 cup chicken broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 1.5 tsp cajun seasoning
- 0.5 tsp smoked paprika
- 0.5 tsp black pepper
- salt (optional)
- 2 whole green onion, sliced
- 2 tbsp fresh parsley
- 1 sprinkle cajun seasoning (optional)

## Instructions

1. Cook the bacon until crispy, crumble it, and set aside.
2. Melt butter in a large pot.
3. Add onion and cook for 3–4 minutes.
4. Add garlic and cook for 30 seconds.
5. Add potatoes, chicken broth, Cajun seasoning, paprika, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
6. Mash some of the potatoes with a masher, leaving some chunks for texture.
7. Stir in heavy cream and simmer for another 3–5 minutes.
8. Add cheddar cheese and stir until completely melted and creamy.
9. Serve hot and top with crispy bacon, green onions, parsley, and a sprinkle of Cajun seasoning.
