# Single Serve Ginger Molasses Cookie

Makes two big cookies, perfect for one person or to share.

## Ingredients

- 3 tbsp butter, softened to room temperature
- 2 tbsp brown sugar, packed
- 2 tbsp white sugar
- 1/4 tsp vanilla
- 1 whole egg yolk
- 1 tbsp unsulphured molasses
- 1/2 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
- 1/4 tsp kosher salt
- white granulated sugar, for rolling (optional)

## Instructions

1. In a medium bowl, use a fork or rubber spatula to stir together the softened butter and sugars until combined.
2. Mix in the egg yolk, vanilla, and molasses until well combined.
3. Stir in flour, baking soda, spices, and salt until combined.
4. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
5. Chill the dough in the fridge.
6. Scoop the dough into two balls, roll in white granulated sugar, and place on a baking sheet.
7. Bake until edges are firm and set and the centers are just set.
8. Allow the cookies to cool on the baking sheet to set up.

## Tips

- Cream the butter and sugars by 'smooshing' the mixture against the side of the bowl.
