## Ingredients

- Olive oil
- Carrots
- Potatoes
- Celery
- Zucchini
- Onion
- Leeks
- Salt
- Pepper
- 3.5 liters Chicken stock

## Instructions

1. Drizzle a little olive oil on the bottom of a pot.
2. Roughly chop the carrots, as the exact cut size doesn't matter since they will be puréed. Add them to the pot.
3. Chop the celery into large pieces and add it to the pot.
4. Chop the leeks into large pieces and add them to the pot.
5. Chop the onion into large pieces and add it to the pot.
6. Chop the zucchini into large pieces and add it to the pot.
7. Chop the peeled and washed potatoes into large pieces and add them to the pot.
8. Season the vegetables with salt and pepper.
9. Add a bit more olive oil to the vegetables in the pot.
10. Place the pot on the stove over heat and let the vegetables sweat for a bit.
11. Add about 3.5 liters of chicken stock to cover the vegetables, adding a bit more stock or water if needed.
12. Bring the soup to a boil, then reduce heat and let it simmer for about 45 minutes until all vegetables are cooked.
13. Remove the pot from the stove.
14. Use an immersion blender to purée the soup until it reaches a desired smooth consistency.
15. Check the soup for any remaining chunks to ensure it is fully puréed.
16. Ladle the hot soup into a bowl.
17. Garnish with a generous amount of freshly ground pepper.
18. Taste the soup and enjoy.

## Equipment

- Cutting board
- Chef's knife
- Large pot
- Stove
- Wooden spoon
- Immersion blender
- Ladle
- Soup bowl
- Pepper mill

## Tips

- The size of the vegetable chop doesn't really matter since they will be puréed.
- Think about the strength of the vegetable's flavor; some vegetables, like zucchini, have a subtle flavor and you can add a lot, while others, like onion, have a strong flavor, so you don't want to overdo it.
- If you just throw these vegetables in a pot of boiling water with a bit of salt and purée them, it will taste decent. Adding different levels of seasoning or stocks makes it better.
- Add more stock or water if needed during cooking, as the liquid will reduce.
- Check for chunks after blending to ensure a smooth texture.
- You can add croutons, a touch of cream, or chives to your finished soup.
