# Plant-Based Spam Musubi

A plant-based, vegan version of traditional spam musubi using mung bean egg and glazed tofu, shaped using an upcycled tofu container.

## Ingredients

- 1 whole nori sheet
- 1/2 cup cooked rice
- 1/2 cup mung bean egg mixture
- 6 oz extra firm tofu
- 2 tbsp soy sauce
- 1 tbsp mushroom oyster sauce
- 1 tsp brown sugar
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp white pepper

## Instructions

1. Place a nori sheet into a clean tofu container, then top with a layer of cooked rice.
2. Pour the mung bean egg mixture into a rectangular pan and cook into a rolled omelet shape.
3. Remove the omelet from the pan and slice into a rectangle that fits the width of your container.
4. Place the sliced omelet on top of the rice layer in the container.
5. Slice the extra firm tofu into a rectangular shape.
6. Fry the tofu slices in the pan until golden brown.
7. Add a mixture of soy sauce, mushroom oyster sauce, brown sugar, garlic powder, smoked paprika, and white pepper to the pan and coat the tofu.
8. Place the glazed tofu on top of the omelet layer in the container.
9. Fold the overhanging edges of the nori sheet over the tofu, then invert the container onto a board to unmold the musubi.
10. Slice the musubi into four equal pieces.
