# Pomme Anna

A classic French potato dish named after a famous 19th-century courtesan, known for its crisp, golden exterior and soft, garlic-and-thyme-infused interior.

## Ingredients

- some garlic, thinly sliced
- some clarified butter
- some potato, sliced 3mm thick
- some fresh thyme
- some salt

## Instructions

1. Preheat oven to 200°C (390°F) with a tray inside.
2. Thinly slice garlic and fry in clarified butter until golden.
3. Strain the butter to obtain garlic-infused butter.
4. Slice potatoes 3mm thick, using a ring cutter for the top layer slices.
5. Add a little butter to a cast iron pan and layer potatoes in a circle, overlapping by a third.
6. Brush the layer with garlic butter, then add thyme and salt. Repeat process until you have three layers.
7. Finish top with thyme and salt, then cook on stove over medium heat until potatoes start to color.
8. Transfer to oven and cook for 40 minutes, basting with butter every 10 minutes.
9. Let rest for a few minutes before flipping out onto a plate.
