## Ingredients

- 1 cup corn syrup
- 2 cups sugar
- 1 cup water
- 1 cup peanuts
- 1 teaspoon baking soda
- 1 tablespoon baking soda
- 1 tablespoon gelatin

## Instructions

1. Heat corn syrup, sugar and water together.
2. For brittle, just before the sugar caramelizes, add peanuts and continue to cook until a light golden brown.
3. Turn off the heat and mix in a teaspoon of baking soda.
4. Honeycomb starts the same way but leaves out the peanuts and uses a full tablespoon of baking soda.
5. Sponge candy includes one extra ingredient.
6. Once the sugar is light golden brown, gelatin is mixed in to give the candy more structure.
7. After adding a tablespoon of baking soda and letting cool, the sponge candy holds its shape for a tall and crisp confection.
