# Malt Loaf

## Ingredients

- to taste for greasing butter, softened
- 150 ml black tea
- 175 g barley malt extract
- 85 g dark muscovado sugar
- 300 g dried mixed fruit
- 2 whole egg
- 250 g plain flour
- 1 tsp baking powder
- 0.5 tsp bicarbonate of soda

## Instructions

1. Pre-heat the oven to 150C.
2. Grease the loaf tin with butter and line with baking paper.
3. Make up the hot tea, then pour into a large mixing bowl.
4. Add the malt extract, sugar, and dried fruit, then stir well.
5. Add the beaten eggs to the mixture and stir well.
6. Add the flour, baking powder, and bicarbonate of soda to the mixture and stir until combined.
7. Pour the mixture into the prepared loaf tin and bake in the oven.
8. While warm, brush the top of the loaf with extra malt extract.

## Tips

- Use a 2lb loaf tin.
- Let the loaf sit in an airtight container for 2 days to develop the flavour and make it stickier.
