- 90 g powdered sugar
- 40 g maple syrup
- 15 ml milk of choice
- 4 g vanilla bean paste or extract
- large pinch salt

## Instructions

1. Preheat the oven to 350°F (175°C) and grease a 10.5x7.5 inch or 8x8 inch baking dish with butter.
2. Add 1/2 cup (113g) of salted butter to a saucepan over medium-high heat, melt, and brown while stirring continuously for 5-8 minutes until it reaches a deep golden amber color and smells nutty.
3. Immediately pour the brown butter into a large bowl and set aside to cool slightly for 15-20 minutes.
4. In a large saucepan over medium-high heat, add 2 tablespoons (28g) butter, 3 1/2 cups (390g) diced apples, 1/2 cup (120g) light brown sugar, 1 teaspoon (2g) cinnamon, optional 1/2 teaspoon (1g) apple pie spice, and a pinch of salt.
5. Cook the apples until the sugar melts and they start to soften, stirring occasionally for about 10 minutes, covering the pan with a lid for a few minutes to steam them.
6. Once the apples are softened and the mixture is slightly thickened and gooey, remove from heat and stir in 1 teaspoon (4g) vanilla bean paste or extract.
7. Set the cooked apples aside to cool.
8. Prepare the cinnamon swirl by mixing 1/2 cup (120g) brown sugar and 2 teaspoons (4g) cinnamon in a small bowl.
9. In a medium bowl, whisk together 2 1/2 cups (300g) all-purpose flour, 1 1/2 teaspoons (6g) baking powder, 1 teaspoon (4g) baking soda, 1/2 teaspoon (3g) salt, 1 teaspoon (2g) cinnamon, and optional 1/2 teaspoon (1g) apple pie spice.
10. To the cooled brown butter, add 3/4 cup (180g) light brown sugar and whisk to combine.
11. Add 1/2 cup (120g) Greek yogurt or sour cream and whisk to combine.
12. Whisk in 2 eggs and 2 teaspoons (8g) vanilla bean paste or extract.
13. Add 1/2 cup (120ml) milk and whisk until well combined.
14. Add the dry ingredient mixture to the wet and gently whisk to combine until the batter is thick.
15. Add half of the cooked apples to the batter and gently fold them in with a wooden spoon or spatula.
16. Transfer or scoop half of the batter into the prepared pan and spread into an even layer.
17. Sprinkle the surface with half of the cinnamon swirl mixture.
18. Top the cinnamon swirl with the remaining half of the batter, spreading it into an even layer.
19. Disperse the remaining cooked apples over the surface of the batter and sprinkle the remaining cinnamon swirl mixture on top.
20. Bake at 350°F (175°C) for 50-60 minutes, or until golden and a toothpick inserted into the middle comes out clean or with moist crumbs.
21. Remove and let cool for 5-10 minutes.
22. While the cake is baking, prepare the glaze by whisking together 3/4 cup (90g) powdered sugar, 2 tablespoons (40g) maple syrup, 1 tablespoon (15ml) milk, 1 teaspoon (4g) vanilla, and a large pinch of salt until smooth.
23. Drizzle the glaze all over the cake.
24. Scoop the cake directly from the pan and serve warm with vanilla ice cream for dessert, or a cup of coffee for a cozy breakfast.
