## Ingredients

- white onion
- rigatoni
- garlic cloves
- tomato paste
- vodka
- heavy whipping cream
- salt
- onion powder
- garlic powder
- red pepper flakes
- black pepper
- parmesan
- sharp cheddar cheese

## Instructions

1. Chop the white onion
2. Sauté the white onion
3. Add noodles to boiling water
4. Chop garlic cloves
5. Add chopped garlic to pan with onion
6. Drain the pasta and reserve the pasta water
7. Add tomato paste
8. Add vodka
9. Add heavy whipping cream
10. Add salt, onion powder, garlic powder, red pepper flakes and black pepper
11. Add reserved pasta water
12. Add parmesan
13. Add fresh grated cheddar cheese
14. Add pasta noodles
15. Plate the dish
16. Top it off with some parmesan

## Tips

- Reserve some pasta water to be used in the sauce
- Fresh parmesan melts way better
